Need a non-boring, delicious, and healthy side item...then these scalloped potatoes should do the trick! The only thing I don't like about them is that they take an hour and thirty minutes to cook, but the wait is worth it!
Ingredients
2 Tbsp of light butter
1 large onion, finely chopped
1/4 C all-purpose flour
2 C fat-free milk
1/4 C fat-free half and half
1 Tbsp dried parsley
1/8 tsp salt and 1/8 tsp salt
1/8 tsp pepper and 1/8 tsp pepper
2 pounds baking potatoes, peeled and thinly sliced
2 Tbsp shredded or grated Romano or Parmesan cheese
Preheat oven to 325 degrees. Lightly spray an 8-inch square glass baking dish with cooking spray.
In a medium saucepan, melt the butter over medium-high heat, swirling to coat the bottom. Cook the onion for about 3 minutes, or until soft, stirring frequently.
Whisk in the flour. Cook for 1 minute.
Whisk in the milk. Cook for 3 to 4 minutes, or until the sauce is thickened, whisking constantly.
Whisk in the half and half, parsley, 1/8 tsp salt, and 1/8 tsp pepper. Remove from heat.
Arrange potatoes in the baking dish. Sprinkle with 1/8 tsp salt and 1/8 tsp pepper. Pour the sauce over the potatoes. Sprinkle with the Romano.
Bake for 1 hour and 30 minutes.
A healthy serving would be 1/2 C of scalloped potatoes!
