Peach Stuffed French Toast - Light Version


I love french toast! We used to have it all the time growing up.  I think my mom would make it when we didn't really have anything else to eat because we always had bread and eggs in the refrigerator! We found this recipe in a heart healthy magazine a few years ago, and we make it all the time! Having stuffed anything seems difficult to make, but this is a super easy recipe.  

Ingredients
2 Tbsp finely chopped pecans
1 tsp light brown sugar
1/2 tsp ground cinnamon
1 15-ounce can sliced peaches, well drained and diced
2 Tbsp light tub cream cheese
1/8 tsp ground nutmeg
4 slices of whole-wheat bread, halved
2 large egg whites
2 Tbsp fat-free milk
1/4 C honey

Mix together the first six ingredients.  You might have to wait for the cream cheese to soften before you can mix it well.
Put 4 slices of bread {halved} on a flat surface.  Spoon the cream cheese mixture onto each.  Top with the remaining bread.
In a shallow dish, whisk together the egg substitute and milk.  Dip the stuffed bread in the egg mixture, turning to coat and letting the excess drip off.
Heat a large nonstick griddle or nonstick skillet over medium-high heat. Cook the bread for 2 to 3 minutes on each side, or until the outside is golden brown and the filling is heated through.  

A healthy serving would be 1 stuffed french toast, 2 Tbsp of pecans and, and 1 Tbsp of honey!
