Back at it this week with our slow-cooker challenge! This past weekend we enjoyed pizza, Mexican take-out, and sandwiches for supper! But we were back to slow-cooker meals last night, and we had one of our favorites Taco Soup. You can actually cook this soup on the stove-top or in the slow-cooker, but I like being able to fix it during nap time and and then forget it for awhile until supper!
There are many different versions of Taco Soup, but this recipe is one I acquired from someone who said it was the Weight Watchers version. Whether it is or not, it's good and light, and pretty healthy.
Ingredients
1 pound of ground turkey meat
1 can of pinto beans
1 can of navy beans
1 can of black beans
1 can of whole kernel corn, drained and rinsed
1 can of diced tomatoes
1 can of water
1/2 pack of ranch seasoning
1/2 pack of taco seasoning
Toppings
Light sour cream or Greek Yogurt
shredded cheese
avocado
Brown the meat and drain. Add the meat to the slow cooker along with all the other ingredients. Cook on low for 3-4 hours. Serve with any of the toppings. A healthy serving would be 1 1/2 cup of soup, 2 Tbsp of cheese or 2 Tbsp of chopped avocado, and 1 Tbsp of light sour cream or Greek Yogurt.
