I am big believer in not sacrificing taste for healthy! Now, it might take some trial and error to find a delicious and healthy recipes for the things you like, but once you find that one recipe it is all worth it. These wraps are on our monthly rotation of meals. The best part...it falls in line with my meal plans and my kids and husband love them! #winwin
Here is the recipe:
12 ounce eye-of-round roast or sirloin, cut against the grain into 1/8-inch slices
1 small onion, thinly sliced
1 medium green bell pepper, thinly sliced
fat-free sharp cheese
corn tortillas
1. Sprinkle the steak with salt and pepper
2. Preheat oven to 350 degrees F
3. Heat a nonstick griddle or large nonstick skillet over medium-high heat. Cook steak for 3-5 minutes, or until no longer pink, stirring occasionally. Transfer to a bowl and cover.
4. Cook the onions and bell peppers for about 5 minutes, or until soft, stirring occasionally.
5. Place the tortillas in a large, shallow baking pan. Spoon the beef down the center of each tortilla. Top with the onion mixture and cheese. cover with the aluminum foil. Heat in the oven for 4 to 5 minutes.
6. Eat when cooled!!!
For my 21 day fix meal plan, I use 2 corn tortillas (1 Yellow), and divide 1 red container of meat between the two, 1 green container of the onion mixture between the two, and 1 blue container of cheese between the two. So its 1 Yellow, 1 Red, 1 Green, and 1 Blue! So good!
