As you know, anything Mexican is a favorite around here, so I had to try these fajitas from The Defined Dish. I halved the recipe, and followed everything exactly. I didn't make my own guacamole though. I also only used one poblano pepper because I was worried about it being too hot and spicy.
I had mine in butter lettuce cups, my husband enjoyed his in quesidillas, my daughter just ate her steak, and my son wasn't feeling any of it. I also had a side of cauliflower rice with my dinner as well! But, overall we really liked this slight change from just your ordinary steak fajitas.
A good serving would be 3/4 cup of meat (4/6 oz), a cup of peppers/mushrooms/onions, and 1 cup of cauliflower rice.
